Hands down, this is the best meatloaf recipe we've ever had in our house

 


Ingredients:


2 pounds of ground beef

1 minced yellow onion (reserve some for glaze)

12 ounces dried stuffing mix

1.5 cups of milk

2 eggs

Salt and pepper to preference

Glaze:


1.5 cups of ketchup

1/4 cup light brown sugar

2 tablespoons of minced onion (reserved from above)

2 teaspoons of white vinegar

1 tablespoon of yellow mustard

1/2 teaspoon of pepper

Steps:


Prepare slow cooker with foil, leaving enough to help with meatloaf removal.

For the glaze, mix ingredients in a separate bowl.

In another bowl, mix beef, onion, stuffing, milk, eggs, salt, and pepper. Form into a loaf and place in the cooker. Add 1/2 cup glaze on top.

Cook on low for 6-8 hours or high for 3-4 hours, ensuring an internal temperature of 160°F (71°C).

Once done, use foil to lift out the meatloaf. Add 2/3 cup glaze and broil until the glaze caramelizes.

Serve with chosen sides and extra glaze.
